Blueberry Muffins That Taste Indulgent, Nourish Your Hormones & Feed Your Gut

(Gluten-Free, Dairy-Free & Blood Sugar Friendly)
There are plenty of "healthy" blueberry muffin recipes online - but few are designed to truly nourish your hormones, support your gut, and keep your energy steady throughout the day.
These blueberry muffins have been one of my favourite recipes for years. I first created them for one of my early detox programmes, and they've remained a staple in my kitchen ever since. In fact, one participant once told me she had to stop baking them because they were simply too delicious - she couldn't stop eating them!
Why this recipe works
Every ingredient in this recipe has been chosen with a purpose:
Blueberries → Polyphenols to support the gut microbiome and protect brain cells
Zucchini → Adds moisture while increasing plant diversity and fiber
Lemon zest and pulp → Rich in flavonoids and pectin to support beneficial gut bacteria
Maca → An adaptogen traditionally used to support resilience, focus and hormonal wellbeing
Chia & psyllium → Different fibers to help support satiety, digestion and steady blood sugar but also provide texture
Nut flours & nut butter → Healthy fats and protein for lasting energy that provide debth, yumminess and a naturally sweeter taste
Instead of relying on refined flour and sugar, these muffins combine naturally sweet nut flours with fiber-rich ingredients like chia seeds and psyllium husk to help support balanced blood sugar and long-lasting satiety.
Zucchini keeps these muffins wonderfully moist while quietly adding potassium, vitamin B6 and protective plant compounds like lutein - without anyone ever guessing there's a vegetable inside - a simple trick I love using in healthy baking.
Fresh lemon zest adds a bright, refreshing flavour while providing citrus flavonoids and pectin, a type of prebiotic fiber that helps nourish beneficial gut bacteria.
Juicy blueberries bring natural sweetness together with polyphenols and antioxidants that have been linked to healthy ageing, brain function and cardiovascular health.
And finally, there's my favourite secret ingredient: gelatinized maca powder. Besides adding a subtle caramel-like flavour, maca has traditionally been used to support focus, resilience and hormone balance. While it doesn't directly increase hormone levels, research suggests it may help women better adapt to hormonal changes during perimenopause and menopause. Maca can cause digestive upset for sensitive people, that’s why I’m using the gelatinized form that’s gentler on the gut. Together with the blueberries, it also makes these muffins a wonderful recipe to support both hormone and brain health.
The result is a moist and flavor-rich muffin that's naturally gluten-free, dairy-free, high in fiber and healthy fats, and satisfying enough to enjoy for breakfast, as an afternoon snack or even as a nourishing dessert.

One batch of these muffins contains around 8–10 different plant foods, making them a delicious way to increase your weekly plant diversity - one of the simplest habits you can adopt to support a healthy gut microbiome. But be careful, they won't last long if you don't freeze them ;)

INGREDIENTS:
Wet ingredients:
1 medium zucchini grated - I blend it up to a paste in my hand blender
Zest & juice of 1 organic lemon
125g (about 2 small handfuls organic blueberries)
1/2 cup (or more) filtered water
30g sunflower butter or other nut butter (that's about 1 TBSP)
4 drops of stevia
Dry ingredients:
2 TBSP Psyllium husk
2 TBSP chia seeds
1 heaped TBSP gelatinized yellow Maca powder
30g vegan protein powder
20g coocnut flour
80g nut flour (hazelnut, almond, pumpkin, sunflower...)
1/2 tsp cream of tartar baking powder or bicarb powder
pinch of sea salt
dash of cardamom
1 tsp ceylon cinnamon
1 tsp vanilla or tonka bean extract
PREPARATION:
pre-heat oven @180°C
add all dry ingredients to a mixing bowl
mix in wet ingredients one by one in a food processor or just using a fork - add water last to see how much you really need
the dough should be a bitl less solid like bread dough but still pretty thick so that a spoon will stick in it not run through
carefully fold in blueberries at the end
spoon mix in muffin forms (or just use a cake baking form- you need to extend the baking time to 40-45 minutes in in that case)
bake for approx 30 minutes @180°C until the top is firm
